3-Ingredient Banana

Bread


4 Large Ripened Bananas
2 Large Eggs, lightly beaten
15.25 oz Box Spice Cake Mix
Preheat oven to 350 degrees. Line a 9x5x3 loaf pan with parchment, leaving a 2-inch overhang on longer sides. Mash 3 bananas with a fork in a large bowl until very smooth, reserving 4th and least bruised for bread topper. Whisk in eggs and cake mix until just combined and no lumps remain. Transfer to prepared loaf pan, smoothing out top with a small offset spatula. Slice remaining banana in half lengthwise, then place the halves cut-side up on top of the batter, with curves facing each other. Bake until deep golden brown and a toothpick inserted in center comes out clean, about 50 minutes. Transfer loaf pan to wire rack to cool slightly, about 10 minutes. Run a knife or offset spatula round edges of pan, then invert banana bread onto wire rack and cool completely.
